Food Inc. & Raw Food (a Green Girl’s night out)
Last weekend a friend of mine gathered a bunch of girlfriends for a Film & Food night.
The picture?
While I won’t get into a big discussion of the movie here, what I can say is this: GO SEE IT!!! As its tag-line says, “You’ll never look at dinner the same way.” (And it’s true. Since seeing the film, all of the women present have begun feverishly e-chatting to share tips and resources for making meaningful changes in their food consumer habits. There’s nothing like a group of moms turning their [understandable] anger into action! Watch out, Monsanto!)
Of course, we couldn’t watch a movie like Food, Inc. noshing on mini-sandwiches made from deli platters. Instead we paired this powerful documentary with equally real food – food in the raw.
On the menu?
Rawcos (raw-tacos), green Smoothies and chocolate “drops.” All unprocessed, uncooked, just as nature intended.
Many of the women there hadn’t tried raw-food recipes before so most were shocked at how simply delicious it can be.
Here are two of the recipes you can try at home:
Raw Tacos* (AKA “Rawcos” -meat-free, but just as hearty)
- 2 Cups of raw (organic) walnuts or walnuts and pecans
- 2 Tsp grated cumin
- 1 Tsp grated coriander
- 2 Tbs wheat-free tamari or Namu Shoyu
Place all in a Cuisinart-type blender and CHOP.
Fill base of a Romaine lettuce leaf (the “shell”) and top with fresh, raw salsa (scroll down to bottom of link page), raw cashew sour cream and guacamole, if desired.
Adapted from the book, Rawvolution
Raw Chocolate “Drops”
- 3/4 cup melted cocoa butter ( not easy to find- it usually has to be ordered on-line)
- 1 tsp. vanilla bean
- 1/2 tea. sea salt
- 1 tsp. vanilla extract (optional)
- 1/2 cup Agave
- 3/4 cup raw cacao powder
Melt Cocoa butter over the lowest heat, keep watch not allow it to get to warm, just enough to melt it (the point is this is raw). In a separate bowl mix together all other ingredients then pour in melted cocoa butter mix well.
Using little paper desert cups, spoon chocolate into the bottom of the cup and let it harden. Then add whatever filling you want. Then cover it with the rest of the melted chocolate. If the chocolate gets hard, re-melt it using the double boiler method. Do not over heat it or heat to many times or it will separate.
