Get ready for New Year’s with a Pomegranate Not-tini
Since neither of us is a world-class drinker, recipes that mimic the real thing but without the alcohol (or much), hit the mark.
Here’s one from our book, Celebrate Green! by registered dietitian Mary Purdy (www.NourishingBalance.com), which makes a festive drink for any occasion, but especially for New Year’s eve. (We know, we know, we’re not even past Christmas yet, but why not get these ingredients when you shop for the 25th and save yourself a trip to the store!)
Pomegranate Not-tini
Choose local and organic ingredients when possible
1 cup pomegranate juice
1⁄4 cup lime juice
2 1⁄2 cups soda or seltzer water
5 ice cubes
Pomegranate seeds for garnish
Pomegranate rind sliced into 4 1-cm by
1-inch pieces for garnish
DIRECTIONS
Combine pomegranate juice with lime juice and soda water and ice. Shake or stir very gently for 1 minute. Strain out ice and pour drink into 4 martini glasses. Sprinkle each glass with 5-10 pomegranate seeds which will float atop the drink. Slice a small opening into the middle of pomegranate rinds and secure on the rim of each martini glass.
