Spaghetti Squash - So Nutritious & Delicious!

I haven’t been the hugest fan of squash…but I think that is because I never had it prepared the way my husband made it the other day! Not only was it a great substitute for spaghetti it…I loved the way he served it! Creative presentation goes a long way for me!

Here are the cooking instructions for you:

  1. Cut the squash in half and scoop out the seeds
  2. Place the squash upside down on a tray
  3. Bake it for one hour at 400 degrees
  4. When cooked, turn the halves over (carefully!!)
  5. With a fork, scrape the inside of the squash - it will turn into strings of squash that look like spaghetti!

We used the empty squash halves as decorative bowls! We decided that since it was our first time trying this that we’d also have a small serving of pasta just in case the squash didn’t turn out well…you never know when trying something new! We had some homemade frozen spaghetti sauce that worked perfectly as a topping. It’s a garden fresh sauce made from roma tomatoes and zucchini grown in our garden, you can get the recipe here. We sprinkled a bit of mozza cheese on top and served it with some spinach caesar salad…it was delicious!
