Charoset recipe for Passover
Yesterday, we had a guest post from Michelle Ein, Kavana Cooperative Partner and CSA coordinator in Seattle about celebrating Passover and local food. Michelle also sent this recipe. As will all recipes, when you’re thinking eco, think organic and/or local when possible.
Charoset is one of the symbolic foods on the Passover table, standing for the bricks and mortar that the Israelites used to build the Egyptian king’s storehouses.
Eastern European Jews make charoset from chopped apples, walnuts, a bit of honey, and sweet red wine to moisten; this is a Turkish recipe.
Chop in a processor:
8 oz. pitted dates
8 oz. raisins, dark or golden
2 c. peeled grated apples
Moisten mixture with orange juice or wine, and add ½ c. chopped nuts.
Use as a spread on matzah.
